It is a simple mantra and it is the whole business. Five brands, one standard.
Elements Dining Group started in 2018 with one room and a fairly narrow idea: hand-select Australian produce, cook it over charcoal, and do not complicate what happens in between. Several venues later that has not changed, and neither has the argument for it.
What has changed is the range. A group that began as a steakhouse now runs an American smokehouse in Darlinghurst, a schnitzel house in Haberfield, a local steakhouse in Belmore and a waterfront events room on Pier 8/9. They are not versions of each other. Each has its own name, its own kitchen and its own regulars, and the group deliberately does not paper over the differences.
What holds it together
Three things, and they are unglamorous. The buying is done centrally, so the beef at a Belmore Tuesday dinner comes from the same suppliers as the beef on a Walsh Bay Saturday. The floor training is the same at every venue, which is why a group of thirty runs the same way in Haberfield as it does on the pier. And the function team is one team across every venue, which means when a room does not suit you we can say so and move you rather than sell you the wrong space.
That last point is the one that matters commercially and the one most groups get wrong. A single restaurant with a booked-out Saturday loses the booking. We move it down the road.
Purveyors of flavour
The kitchens share a philosophy more than a menu. It is not overly complicated, but rather a marriage of fine food and flavour, culminating in menus that meander from perfect pasta to vegetarian delights. Share plates that delight the tastebuds, with the best craft beers and finest wines to complement the grill.
Oh how we love to share. That is not marketing; it is why almost every set menu in the group is built to go down the middle of a table rather than in front of one person.
