Guides

The steak guide
Every cut on our menus, where it sits on the animal, how fatty it is and how it should be cooked. Fourteen cuts, each with its own page.

The wine guide
Every grape on our wine list, from light to full. Pick your steak and it shows you what to order, with the bottles we pour by the glass.

The steak pairing guide
Cut by cut: the sauce, the side and the glass that suit it. Built from the same cut notes as the steak guide, so the two never disagree.
A menu is a list of names
Scotch fillet, sirloin, porterhouse, New York strip. Two of those are the same steak. Most people order the thing they ordered last time because the alternative is asking, and nobody wants to ask. These guides answer it beforehand.
Frequently asked
How many guides are there?
Three: the steak guide, the wine guide and the steak pairing guide. Each one sits at its own address rather than underneath this page.
Where do the cut descriptions come from?
Our own kitchens and menus across the five restaurants. The same wording is used on the cut pages, the pairing guide and the quizzes, so nothing contradicts anything else.
Can I order the cuts in the guides?
Most of them, yes. Each cut page names the menu item and the restaurant that serves it.
