Chardonnay
Lemon, white peach, cashew, a little oak.
From lean and mineral (Chablis) to rich and creamy. The most versatile white there is.
What Chardonnay tastes like
Lemon, white peach, cashew, a little oak. Body: full. Acidity: medium.
Where Chardonnay comes from
Chardonnay comes from Burgundy and is now grown almost everywhere wine is made. Australian highlights include Margaret River, the Adelaide Hills, the Yarra Valley and Tasmania.
Styles to look for
Chablis, in the north of Burgundy, is lean and mineral with little or no new oak. Warmer, oaked styles are richer, with notes of cashew, butter and toast. Modern Australian chardonnay usually sits between the two.
Food it suits
Roast chicken, lobster, prawns, creamy pasta and soft cheeses.
How to serve it
Serve chilled, around 8 to 12°C. Fuller whites sit at the warmer end so they keep their flavour.
Worth knowing
Blanc de blancs Champagne is made entirely from chardonnay.
